Kylie's Deep Dark Chocolate Cake

Possibly the easiest and yummiest moist rich chocolate cake. Its never failed for me! So yum. Seriously.. make this cake!
Yay for having a friend with a birthday so I could do some baking :) I really need to get more organised because the icing (the bit that makes it look pretty or not so pretty) is always done in a rush and ends up looking.. well.. less than delish :)



Mmmmmm.... my handy helper. Seriously he had chocolate EVERYWHERE!!

Recipe-
Ingredients
  • 1 3/4 cup flour
  • 2 1/4 cup caster sugar
  • 3/4 cup cocoa
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 250ml Milk
  • 125 ml Vege or Conola Oil
  • 2 teaspoons Vanilla essence
  • 1 cup boiling water

Mix together all dry ingredients. Add eggs, essence, oil and milk and beat on medium speed for 2 mins (I mix it by hand:)). Stir in boiling water. Grease tin or line with grease proof paper. Bake at 180 degrees C for 55-60 mins (or until skewer comes out clean). It makes quite a big cake! Soooo yum!
Icing- I use chocolate butter cream icing cause its my fav and I google the recipe :)

Casey's Fool Proof Cupcakes


Ok so I am sorry for all these baking posts :) But I really do LOVE baking. And possibly cupcakes are my favorite things to bake.. and eat :) They are seriously delicious, they look pretty and are easy to make. Its like goodness in a cup!! And slowly, with a lot of youtube research, I am learning how to pipe icing :)





Recipe-
Ingredients:

  • 125g softened butter
  • 1 tsp vanilla essence
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 cup standard flour
  • 2 tsp baking powder
  • 1/4 cup milk
Directions
Preheat oven to 190'c
Cream butter, vanilla and sugar until light and fluffy
Add 1 egg and beat really well. Add another egg and beat again.
Sift flours and baking powder and fold into mixture. Stir in milk.
Spoon into paper cases (around 12)
Bake for about 14mins or until lightly brown

Frosting- I just google a butter cream icing recipe and do that :)

Chewy Chocolate Chip Cookies with Levi

A friend of mine gave me the idea of baking with Levi. I have tried before and well.. he was a pain, so haven't tried again. But last week thought it could be something fun for us to do together. Levi LOVES pretend cooking on his play stove.. so surely real cooking must be fun?
It was a partial success... and fun.. so it was more of a success than not. And that's the most important thing isn't it? But you should totally make these.. they are SOOO yummy. Kinda like Subway cookies. Very yum!

Lets just say they lasted less than 24hours, and  Stevo didn't have one.... :)

Recipe-
Ingredients
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup melted butter
  • 1 cup packed brown sugar
  • 1/2 cup of white sugar
  • 1 TBS vanilla essence 
  • 1 egg
  • 1 egg yolk
  • 2 cups of chocolate chips (or substitute some for berries or nuts)
Directions
Preheat the oven to 165 degrees C. Grease cookie sheets or line with parchment paper.
Sift together the flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. .
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

2 cup Sultana Loaf

I trick myself that Sultana Loaf is healthy. It has fruit in it right? And fruit is healthy.. so there... that's perfect logic if you ask me. And lets just be honest for a minute.. there isn't really such a thing as yummy healthy baking is there? Baking in my opinion equals butter and sugar.. but anyway this recipe has raw sugar.. which is the healthy version of sugar aye? ;) Seriously thou.. its GOOOOD!
And see.. this is the fruit of my cleaning/decluttering labors  A clean organised kitchen = baking galore. Need to make more skinny friends to give the baking to. Everyone seems to be "eating healthy" (me included... mostly....) where are you "eating unhealthy" people.. and please make friends with me so I can bake for you. Its a win win (except for your arteries.. they loose, but we won't think about that:)

YUMMMM Gluten Free Brownie

I have a pretty delish brownie recipe. Its SO rich and chocolaty and so so good. I made some for Levi's birthday party and ate.. hmmm.. (don't judge) about 6 pieces in an afternoon. Its my weakness..
Anyway, I have a lovely friend who is gluten intolerant so wanted to find a yummy recipe.. and I'm stoked I found it.. I think everyone needs a good gluten free recipe.. to share the love with the gluten deprived masses.


I plated this piece to take the photo and HAD to eat it... it's a hard life sometimes :)

The Cake to End all Cakes...

If this cake was a kid it would be the ugly fat kid that no-one wants to talk to.. and then when u do talk to them they are so so so sweet that they makes you sick. You can only take them in VERY small doses!
Stevo may have said something like "its diabetes in a slice".. it sums it up well.
Because you cant see from the pictures.. its a chocolate cake, cheese cake with reeses pieces (35 big ones cut up), and caramel with peanut layered cake. Its yummy, but not sure I want more.. ever.
